Easy Christmas treats using BatchMade fig & thyme jam
1. Fig Jam straws
These make an easy dessert served with ice-cream or make smaller ones for a quick and simple morning tea.
Ingredients
1 package of puff pastry ( 2 sheets)
1/3 cup of BatchMade fig and thyme jam - chop fig pieces in half.
Flour for dusting
Powdered sugar for sprinkling
Method
Heat oven to 200 degrees celsius. Line 2 cookie sheets with baking paper.
Allow puff pastry to thaw as directed on the package. Dust work surface and rolling pin with flour to prevent sticking. Roll out puff pastry until about 5cm larger on all sides. Cut pastry crosswise into 2 rectangles.
Using a pastry brush, coat 1 piece of pastry with 1/2 the jam. Cover jam-coated pastry with remaining plain piece of pastry and gently roll together with rolling pin. Don't do this too hard or the jam will squish out.
Slice into long or short strips and twist. Then place on lined cookie sheet. Bake for 15 minutes or until golden brown. Let cool before removing from the sheet. Sprinkle generously with powdered sugar.
Repeat process with second sheet of puff pastry.
Notes
- the pictured fig jam straws are long and perfect for an easy dessert (they were cut short wise along the pastry rectangle). If you want you can make smaller ones for an afternoon tea. Just cut them long lengthwise and then divide in 3 or 4 before twisting.
- Don't overfill the pastry with too much jam otherwise it overflows when twisting the pastry. Although a little overflow looks and tastes yummy!

2. Prosciutto, basil, fig jam and goats cheese crostinis
Ingredients
1 baguette
1/4 cup extra virgin olive oil
sea salt flakes
fresh ground pepper
110 grams plain goats cheese (at room temperature)
1 jar of BatchMade fig & thyme jam
slices of proscuitto
fresh basil leaves
Method - Prepping the crostini bread
Preheat oven to 190 degrees celsius.
Slice baguette into 1.5cm thick pieces at an angle.
Brush each piece with olive oil and sprinkle with pepper and salt.
Bake for 8-10 minutes or until bread is lightly browned and crisp.
Take out of oven and let cool completely,
Method - Putting the crostinis together
You need 1 tbsp goats cheese, 1 tbsp fig jam, 1/2 slice prosciutto and 1 basil leaf per crostini.
First spread on about 1 tbsp goats cheese on crostini. Then spread on 1 tbsp fig jam, Roll together 1/2 slice prosciutto with 1 basil leaf and place on top of the fig jam.
Serve immediately.
