Hello Jam-friends, Welcome to Winter and finally marmalade season has arrived at BatchMade. All things citrus are now ripe and we're starting with cumquat marmalade this month. It is bitter and sweet, just as a good marmalade should be. In fact, I'll let you in on a little secret.... when I'm making jam, I try and make it as quickly as possible, to give you the brightest and freshest jam. But for cumquat marmalade, it's a long slow simmer - in fact if you can burn it slightly, you get an amazing caramelised taste which is absolutely delicious! So the colour is golden and the taste is rich and sweet with a bitter tang.
Happy 1st May, I've stopped procrastinating and finally managed to complete the new BatchMade website. What a great job to do while we are stuck at home. Good-bye Summer! For once, I can't say I'm sorry to see you go. My aim this month, is to try and make the most of this mild weather and get out on the weekends and visit regional areas around Australia, that are suffering from fires, drought and now coronavirus. It's not over yet (by a long shot) for all of those affected. Don't forget to take an empty esky when you go and spend up on local produce.
